
The Dining Room at Purchase's is run under the watchful eye of the chef and patron, Neil Rusbridger. Neil who trained at such eminent places as the Chewton Glen Hotel and for Michel Roux at the Waterside Inn making him suitably qualified to utilise the local produce and marry them with some more exotic flavours and ideas; creating a really great place to dine.
We are very careful to select our suppliers and produce, to ensure traceability and sustainability and do not use imported goods unless absolutely necessary.
The Dining Room additionally offers a delicious range of foods from mouth watering Danish Open Sandwiches to more elaborate dishes such as homemade Foie Gras Terrine, lovely plump Irish Oysters, superb local fish, game and of course delectable homemade Sorbets, Ice-Creams and Desserts. As the darker, cooler months creep in, so comes with it the warming flavours and slow cooked dishes of braised lentils with pigeon, local pheasant and an innovative saddle of lamb marinated in coffee and juniper, with a blackberry jus and served with roasted autumn vegetables - to name but a few items from the new menu.
Our new dessert menu, also reflects the changes in the season with Bramley apple jelly with a cinnamon cream and madelines and an orange panacotta with roasted figs and quince pears.

A range of fine cheeses – mainly English or British – is offered to tempt you if you prefer a savoury finish to your meal, if you are able to resist the delights of the dessert menu and the new range of ice-cream and sorbets, made in Chichester by Caroline's dairy.
